It’s true, egg salad sandwiches don’t have to be slathered in mayo. In fact, they don’t even have to include one drop of mayo. But how do the eggs stick together, you ask? With avocado, of course.
Avocado is like the Windex of ointments (‘My Big Fat Greek Wedding’ – remember?). Add it to anything and your meal is better.
So instead of mayo, I “slathered” the egg whites with avocado, fresh dill, and minced radishes…and rolled it all up in a whole wheat tortilla.
Avocado Egg White Salad
Avocado egg white salad rolled up into tortilla sandwiches.
- 1 ripe avocado
- 4 hardboiled eggs - egg whites only, chopped
- 1 tablespoon fresh dill
- 2 minced radishes
- salt & pepper to taste
- hot sauce to taste
- 4 whole wheat tortillas
- 4 red lettuce leaves
- In a small bowl, add the avocado and mash until smooth. Add the egg whites, dill, radishes, salt and pepper, and hot sauce and stir until combined.
- Lay a lettuce leaf on top of each tortilla. Top each leaf with the egg salad mixture, roll, and stick with a toothpick to secure.
